Chipotle Seared Scallops with Mango Salsa

Ingredients
- 1 pound bay scallops
- Chipotle chili powder
- 2 tbsp olive oil
- 2 mangos (peeled & chopped)
- 2 peaches (chopped)
- 1 cup diced pineapple
- 1 small red onion, diced
- 1 red bell pepper, diced
- 1 yellow bell pepper, diced
- 1 jalapeno (seeded and diced)
- 1 bunch cilantro (chopped)
- Juice of 1 lime
Instructions
Step 1 | Combine all salsa ingredients in a bowl and mix together, cover and refrigerate at least 1 hour.
Step 2 | Pat dry scallops with a paper towel, and sprinkle with chipotle pepper.
Step 3 | Heat oil in large nonstick skillet and sear scallops for 3-4 minutes on each side.
Step 4 | Plate scallops, spoon on salsa and serve.
