"A tribute to our innovative roots. For our 40th anniversary we created a sparkling wine in the oldest known production method, Méthod Ancestrale which dates to 1531. A specific blend of two of our premier blocks of Pinot Noir and Chardonnay were gently pressed and combined at harvest. Fermentation was started in the tank, and midway through, chilled to slow fermentation, preserve freshness and purity, and allowed to finish in the bottle. This wine is disgorged and intentionally left with zero sugar to highlight the beauty of what the vintage gave us."
