
Pairs with Vista Brut
Fromage Blanc Toast with Meyer Lemon & Cucumber
Whip up these super easy mini toasts with fresh cucumbers and fromage blanc! The Meyer lemon in this summer recipe pairs perfectly with the ripe nectarine and red apple flavors of our Vista Brut.
Serves 8
Ingredients
- 1-2 cups Fromage Blanc, preferably from Cowgirl Creamery
- 8 pieces rustic bread, sliced ½” thick
- 1 English cucumber, peeled, de-seeded, ¼” dice
- 1 Meyer lemon
- Fresh herbs, such as chervil or parsley
- Gloria Ferrer Arbequina Extra Virgin Olive Oil
Instructions
Step 1 | Drizzle bread with olive oil and toast in a 400 °F degree oven until lightly toasted. About 8 minutes.
Step 2 | Cut the “cheeks” off the lemon and dice into ⅛” pieces.
Step 3 | Toss the diced cucumber and lemon bits in a small bowl with a pinch of salt and a dash of olive oil. Taste and adjust with more oil, salt, or lemon.
Step 4 | Spread the cheese on warm toasts and top with the cucumber relish. Garnish with fresh herb sprigs and serve with Gloria Ferrer Vista Brut.
