Tasting Notes

Notes of stone fruit and black cherry with a long finish.

The rich aromas of Asian pear, ripe apple, and a delicate touch of honey and vanilla greet your nose. With each sip of wine, you get a rich and creamy mousse with some lingering fruit on the nose. This continues to build with a bit of crème brûlée and stone fruit layered over black cherry. The finish is long and wraps up with hints of fresh ginger.

Food Pairings

This wine is the perfect accompaniment for seafood. Oysters on the half shell with a chipotle lime mignonette or classic Maine lobster with drawn butter are foolproof pairings for this reputable Brut. Cherry and peach on the palate, with its brilliant acid, pair well with lemon meringue pie or a stone fruit galette with crème fraîche.

The 2011 vintage will be remembered as one of the coolest growing seasons on record. The cool weather during bloom caused the vines to set a light crop and continued through the growing season, which slowed the ripening of the grapes. This resulted in a harvest delayed by several weeks without a drop in acid. The combination of a light crop and extra hang time on the vines produced fruit of excellent concentration and character.
