Mango Basil Shrimp in Wonton Cups

How can you go wrong with ingredients like basil, mango and shrimp? These adorable wonton cups are a tasty combination of exotic flavors. The briny shrimp pairs perfectly with our classic apple and pear sparkling wine, Sonoma Brut. The acidity of the lime juice matches the acidity of the wine which adds the perfect finishing touch to this dish.
24 Wonton wraps
1 Tbsp mayonnaise
1 Tbsp green curry paste
1 Tbsp mango chutney
3 Tbsp fresh lime juice
1/2 Tbsp chili sauce
1/2 Lb cooked medium shrimp, chopped
1/2 Firm mango, peeled and diced small
3 Tbsp chiffonade of basil
Finely chopped salted cashews, optional
- Preheat oven to 325 degrees F. Spray a 24-cup mini muffin pan with cooking spray. Place each wonton square in muffin cup.
- Bake until golden and crisp, about 10-12 minutes. Let cool in pan. Remove to a serving platter.
- Blend mayonnaise, curry paste, chutney, lime juice and chili sauce in a medium bowl. Add chopped shrimp, mango and basil. Stir to combine.
- Season to taste with salt and pepper. Spoon a generous teaspoon of shrimp mixture to each wonton cup. Garnish with additional basil chiffonade and chopped cashews.
