Glorious Spicy Lobster Wontons

These spicy wontons fixed with mascarpone cheese, chili paste, and perfectly cooked fresh lobster is a glorious pairing to our sparkling wine. The classic apple and pear notes of our Sonoma Brut work well with this dish because the dosage of the wine balances out the heat from the chili and makes all the flavors of the dish stand out in glorious ways.


1/4 C small diced plum tomatoes
2 Tbsp chopped chives, plus additional for optional garnish
2 Tbsp mascarpone cheese, room temperature
1 C freshly grated provolone cheese
1 Tsp chili paste
Pinch flaked sea salt
1 C coarsely chopped cooked fresh lobster meat
20 Wonton wrappers
Canola oil

Optional Ranch Dipping sauce:

1 Tsp finely chopped parsley
1/2 Tsp freshly ground black pepper
1/2 Tsp seasoned salt
1/4 Tsp garlic powder
1/8 Tsp onion powder
1 Tsp finely chopped fresh dill
1 Tsp finely chopped fresh chives
1 C crème fraiche
Combine all ingredients in a small bowl, garnish with additional chopped chives.


  1. In a medium bowl combine the tomatoes, chives, mascarpone, provolone cheese and chili paste; stir together then season with a pinch of salt. Add the lobster to the bowl and stir to combine.
  2. Scoop a rounded teaspoonful of the lobster mixture and place on one side of a wonton wrapper. Using your finger, dab a bit of water around the edge of the wrapper then fold diagonally in half and press to seal in the filling; repeat with the remaining wrappers and filling.
  3. Pour about 1 inch of canola oil into a deep 12 inch skillet and heat over medium heat. When the oil is hot add the wrappers, 4 at a time, to the hot oil and cook about 2 minutes per side.
  4. Arrange wontons on a chive garnished serving plate and serve immediately with a refreshing glass of Gloria Ferrer Sonoma Brut…savor and celebrate.

Note: The wontons can be prepared ahead of time and stored in the refrigerator. When ready to serve, reheat on a baking sheet in a 350-degree F oven for 5-7 minutes to re-crisp.
