Ahi Tuna & Green Apple Guacamole Recipe

Who doesn’t have a love for Hawaiian inspired ahi tuna? Not only is it tasty but it reminds you of being on a warm, beautiful island relaxing in the sand. Top that Ahi Tuna with a crisp, acidic apple and avocado guacamole and you have a whole new twist to traditional ahi. Why else do we love this recipe? Because it pairs perfectly with our Sonoma Brut! The classic apple and pear notes of this California sparkling is the perfect complement to the crisp apple guacamole in the recipe.
2 Fully ripened avocados, halved, pitted, peeled and diced
1 Small Granny Smith apple, diced
1 Tomato, membrane and seeds removed, diced
1/2 lb. sushi grade ahi- tuna
11/2 Tbsp each cilantro, red onions & Italian parsley, finely chopped
Juice of 1/2 lime
1 Tbsp Gloria Ferrer Sonoma Brut
1/4 Large yellow bell pepper, chopped membrane and seeds removed
Fleur de sel and fresh ground black pepper to taste
Blue corn chips or tortilla chips (blue corn chips are gluten free)
- Use a fork to gently mash the avocados and mix in the lime juice and Gloria Ferrer Sonoma Brut, finely chopped herbs, onion and pepper.
- Add the apple, tomato and tuna, and gently mix in.
- Taste and season accordingly. Serve immediately on blue corn chips or any brand of tortilla chips you desire.
