Tasting Notes

This charitable Pinot Noir is packed with aromas of raspberries and strawberries, interlaced with hints of smoke. On the palate, this wine houses those same berry flavors along with a supple mouth feel and lingering finish.

Curl up with a glass and welcome winter.

Food Affinities

The earthy yet lighter colored fruit characteristics of this estate Pinot Noir make a fine pairing with autmnal and winter pasta dishes such as butternut squash ravoli with sage butter or wild mushroom risotto.

For cheese, smoked gouda for a decadent treat.

We harvested a blend of a prized clone of Pinot noir, Colmar 538, from our Circle Bar Ranch. We picked these grapes between September 26th and October 3rd.

Winemaking

Small berries provide a high ratio of grape skins to juice in fermenting wine. Most of the flavor, color, and textural qualities come from these skins. Low yields allow grapevines to concentrate most of their energies into fully ripening a smaller volume of grapes. The late harvest allowed plenty of time for flavors and color to develop, before sugars reached harvest levels.
