Bib Lettuce, Avocado and Pistachio Salad
Pair with Gloria Ferrer Brut Rosé
2 heads bib or butter lettuce, washed and dried
1 large low acid navel orange (Cara Cara)
1/4 c shelled toasted pistachio nuts
1/4 c virgin olive oil
Tear large lettuce leaves and keep the small ones whole. Put lettuce into in a large bowl.
Peel avocado, cut into 1/4” slices. Peel and section the orange, saving any juice that accumulates.
Whisk the juice with the olive oil, season with salt to taste. Toss the lettuce with the dressing.
Divide the lettuce onto 6 plates. Top each salad plate with slices of orange and avocado. Sprinkle each plate with pistachios and serve.
